Recipe of the day: Strawberry Yogurt Cake

Right out of the oven!

Recipe:  Strawberry Yogurt Cake

Ingredients

• 1 cup (2 sticks) butter, softened
• 2 cups sugar
• 3 eggs
• 3 Tb. lemon juice, divided
• Zest of 1 lemon
• 2 ½ cups all-purpose flour, divided
• ½ tsp. baking soda
• ½ tsp. salt
• 8 oz. plain or vanilla, Greek yogurt
• 12 oz. fresh strawberries, diced
• 1 cup powdered sugar

Instructions

1. Preheat oven to 325*. Grease and flour a 10 inch Bundt pan (10-15 cup pan.) Sift together the 2 ¼ cups of flour, baking soda and salt. Mix in the lemon zest and set aside.
2. With an electric mixer, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in 1 Tb. lemon juice. Alternate beating in the flour mixture and the yogurt, mixing just until incorporated.
3. Toss the strawberries with the remaining ¼ cup of flour. Gently mix them into the batter.
4. Pour the batter into the Bundt pan. Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center of the cake comes out clean.
5. Allow to cool at least 20 minutes in the pan, then turn out onto a wire rack and cool completely. Once cooled whisk together the remaining 2 Tb. of lemon juice and the powdered sugar. Drizzle over the top of the cake

giving back a $1.99 ecb, making it completely FREE!!  After I was home and looking over my reciept, I realized that the Cottonelle Roll Cover rang up @ $1.87 at my CVS. Making it a teeny, tiny MM. From the looks of it, there may be a limit of two deals per card.  Soooo.. I was thinking about grabbing
another one..  Hey! Don't judge me. LOL.  It's kinda cute. Right..

The deals just keeping getting better! This gaming system was being marked down this morning when I was doing my Sunday morning CVS run. The guy working this morning pointed it out to me, although I thought it was an AMAZING deal, I wasn't sure if I should get it or not. I mean- More than two years ago I bought a wii & all of the accessories, paying right at $400. Ask me how many times I've play it. Yeah. We won't talk about that! So, I was torn. And I left the store without "Zone". The gaming system. After waking up from a much needed nap, I happened to click on Youtube & watched about 2 seconds of a video about a free mp3 player at CVS. No questions asked, I was in my car, on my way to CVS. This was a different CVS from the one I shopped at this morning. Long story short. They had the "Zone" sittiing front & center, so I decided I better pick it up. For me, it was free of course. So why did I even think, before picking this up? Can't wait to try it out. And, whether it works or not, I paid absolutely NADA! ~Using extra care bucks, of course.
